Rule of thumb for everyone should be to wait for your opponent to capitalize on the blunder before you resign. There is always a chance that your opponent won’t recognize your mistake and you can recover.

If it is set to play as stockfish (ELO ~3200), then it will totally destroy you (along with everyone else on this message board) regardless of what opening you play. See if you can turn the engine difficulty down a bit and see if that helps.
